A unique new variety arrives at Taf
Having created a special network with the best producers around the world, we bring to you always unique, small lot, rare coffees of superior quality. For the first time this year, you will be able to taste the new variety of coffee, named Sidra. Yiannis Taloumis, head of quality and initiator of Taf Direct Relationship project traveled to Eastern Cordillera of the Andes, in one of his favorite farms, La Palma y El Tucan, searching, as always, for the coffee that will give the perfect cup! There, the owners of the farm, giving undivided attention and care, they planted three years ago a great variety, that comes from Red Bourbon and Typica, and this year, harvested the first fruits, for the trees that seem to have adapted perfectly! The structure of the branches reminds that of the Geisha tree, and gives large, oblong fruits. They managed to sublimate the taste given by wonderful terroir of the region, which is a very specific microclimate with high humidity. They also applied a flawless process, specially used for Taf coffee, using Lactic-Acid Fermentation. This treatment results in a complex cup, with notes of red apple, bubblegum and milk chocolate. This is how Sidra was born, from unique fruits and only the most ripe cherries. With great pleasure we announce the arrival of Sidra at Taf Roastery within few days, as the only roasters worldwide that have bought the entire first crop of La Palma y El Tucan of the legendary variety Sidra.
